When it comes to healthy meals, a lot of people automatically assume you’re talking about a bland and flavorless meal that will leave you still feeling hungry. That could not be farther from the truth, and this simple sheet pan chicken fajitas dish will prove it. The best part? It takes just one sheet pan and has minimal cleanup time. This recipe, adapted from Food Network, will show you that you can have a healthy meal without tons of effort that is absolutely delicious.
What You Need
1 tablespoon chili powder
kosher salt
black pepper
12-15 red bell peppers, halved and seeded
1 large yellow onion, thinly sliced
2 tablespoons olive oil
1.5 pounds boneless, skinless chicken breasts
juice of a lime
8 flour tortillas, large enough for fajitas, warmed
shredded cheese
guacamole
hot sauce
sour cream
salsa
What To Do
Preheat your broiler to high and line a baking sheet with aluminum foil. In a small bowl, mix together the chili powder, 2 teaspoons salt, and 1 teaspoon pepper.
Scatter the bell peppers and onions onto the baking sheet, drizzling olive oil all over until coated, and mixing about half of the spice mix to the veggies. Broil the onions and peppers until they start to become soft and starting to char, which should take about 10 minutes.
Cut the chicken into pieces that are about 1/4 of an inch thick and mix in a bowl with the remaining spice mix along with a tablespoon of the olive oil.
Once the peppers and onions have started to char, add in the chicken and return to the broiler until the chicken has cooked completely and starts to brown. This should take about 5 more minutes. Once finished, remove from the broiler and drizzle with the lime juice.
Serve the chicken and veggies with the warmed fajitas and toppings like guacamole, salsa, shredded cheese, sour cream, hot sauce, and lime wedges.
